Happy Hour and Dessert in Capitol Hill

Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. It was time for a meal there again.  For dessert, we walked about ten minutes west to  Voodoo Doughnut . The Seattle location opened late last ye...

How to make Christmas Crack | An addicting and delicious treat

Christmas Crack is a weird name, but a totally delicious dessert to indulge in during the holidays. And now that we've made some, it will have to be a yearly staple. To make it, you use Saltine Crackers, butter, brown sugar, and then chocolate chips. Not many ingredients to make this candy-like treat for Christmas!

It's very hard to just eat one piece, so we don't! My kids and I find, we can stop after two pieces. But my husband, the one without the sweet tooth in our family, only wanted one bite. The recipe I used calls for two and a half sticks of butter! That's why this dessert tastes so good. That and the melted chocolate, of course.

Christmas Crack has the perfect balance of sweet and savory. The brown sugar and butter cooked together and set up makes a toffee, the Saltine crackers make it crunchy and salty, and the chocolate makes it even sweeter! You can also add whatever toppings you wish. We used chocolate sprinkles and red and green sprinkles. But you can cook some chopped pecans or sea salt. This treat stays fresh for up to two weeks in the fridge.

I found the recipe here on Cooking Classy.com. I didn't make any adjustments to the recipe, so be sure to check out this link since there's also a lot of helpful hints when making this!
