Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. How to make S'mores Cookies

 

Tastes like summer! A S'mores cookie for the 4th of July holiday.


If there was a dessert that tasted like summer, it would be s'mores. I have many memories of sitting around the campfire roasting marshmallows to make s'mores. Growing up in Montana afforded me many s'mores opportunities. And these memories I've made with my family are some of my favorites. But how about making them in your own kitchen, especially if you don't have access to a campfire? And how about putting a unique twist on your typical s'more and adding chocolate chip cookies to the whole thing? If that sounds too delicious to not try, then keep on reading.

I like scrolling through IG Reels and seeing fun recipe hacks. I happened to see a reel for S'mores Cookies and they looked easy enough and so tasty. You'll need graham crackers, Hershey's Bars, large marshmallows, and ready-made cookie dough. Start by putting down some Parchment paper on a baking sheet. Pre-heat your oven to 350 degrees. 

Add six graham crackers to your baking tray and then top each one with three squares of chocolate. Then add a marshmallow to each one. Finally, you'll add one piece of cookie dough. After a little trial and error, I realized I needed to flatten the dough, because it kept falling off of the marshmallows in the oven. I had to keep opening the oven and putting everything back together. Then bake for about thirteen minutes. Let the cookies cool and set up a bit before storing in an airtight container, or you'll have a gooey mess. A deliciously gooey mess, but a mess nonetheless. 

Since tomorrow is the 4th of July, I'd thought these would be a fun dessert for the holiday. But these would be perfect any day of the year!
