Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. White Chocolate Strawberry Cookies for Valentine's Day

These easy and tasty cookies are perfect for Valentine's Day. You only need four ingredients- white chocolate chips, a box of strawberry cake mix, two eggs, and oil. The cookies are a pretty pink color and they taste like strawberries. 

They come together really fast and taste so good right out of the oven. I found the recipe at Dessertsonadime.com


White Chocolate Strawberry Cookies 

Ingredients:

1 Strawberry cake mix

2 eggs

1/3 cup oil

1 cup white chocolate chips


Directions:

Preheat oven to 350 degrees.

Mix the cake mix, eggs, and oil together in a large bowl. (Batter will be thick). Then stir in the white chocolate chips. 

Use a cookie scoop to scoop out the cookies and place on cookie sheets leaving about two inches between each cookie.

Bake for 8-10 minutes until cookies brown slightly on the edges.

Allow to cool completely and then serve. 


These cookies taste the best right out of the oven, when the center is soft and gooey, and the outside is chewy! Be sure to share them with your Valentine. They're a simple but yummy treat!
