Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. St. Patrick's Day S'more Snack Mix and a Green Cocktail at Paseo

 One of my favorite food combinations is popcorn and chocolate. I love any kind of milk chocolate with my popcorn. It melts a little bit with the warm popcorn and that combination of salty and sweet can't be beat. So when I spotted a snack mix recipe with popcorn, M&M's, and Golden Grahams, I couldn't wait to make some for St. Patrick's Day. 

There are a zillion things you can make for the holiday, but I wanted something a little lighter and something my sons could help put together. You melt mini marshmallows with butter and vanilla as a base for the cereal and popcorn. Then add your green M&M's to make the snack mix look festive. You can use this recipe for any holiday or occasion. The recipe I followed used melted chocolate chips which is drizzled over the snack mix. But we skipped that part, because it already tasted nice and sweet! 

My son separated all of the green M&M's and I got to work popping some popcorn. I added the Golden Grahams and stirred it with the popcorn. Then, I melted some butter and added the marshmallows. I also added Vanilla Extract, then I poured it over the popcorn and cereal and stirred it together. My son added the M&M's and then he stirred everything together. I put down some wax paper and we poured the mixture onto the paper and spread it out. The next part was to drizzle the chocolate, but since we omitted that part, we were all done. Then it was time to try our snack mix! It was a yummy combo. Our St. Paddy's Day treat tasted sweet, salty, and crunchy!

Ingredients:

6 cups popped popcorn

1 cup Golden Grahams cereal

2 T. butter

1 1/3 cup mini marshmallows

1/2 t. vanilla

1/2 cup green M&M's 

3 T. chocolate chips


Instructions:

Stir together popcorn and Golden Grahams in a large mixing bowl. Set aside. Melt butter in a saucepan over medium heat. Add marshmallows. Cook and stir until marshmallows are melted. Add vanilla. Slowly pour over popcorn mixture, until evenly coated. Add the M&M's. Pour mixture onto wax paper and spread out. Melt chocolate chips and drizzle over the top. Let cool until chocolate hardens. Put any leftover mixture into a sealed container. Enjoy!

I also had the Caribbean Roasted Nachos with pork. Their nachos are the best, and I really enjoyed them. They have jalapenos, pineapple, lots of cheese, cilantro, and tender, roasted pork.
