Happy Hour and Dessert in Capitol Hill

Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. It was time for a meal there again.  For dessert, we walked about ten minutes west to  Voodoo Doughnut . The Seattle location opened late last ye...

Air Fryer Donuts

A couple of weeks ago my sister-in-law gave us an Air Fryer. She had an extra and wondered if we wanted it. An Air Fryer was an appliance I'd been eying for a while and was thinking about buying. So, of course, I said yes. I was a little intimidated at first, but now I've made chicken strips, fries, and onion rings, and they've turned out pretty tasty. They don't take long at all to make, and the food tastes hot and crispy! The only problem is, the basket doesn't hold a lot of food, so I find myself doing a couple of rounds for my family if we're all eating some.

I decided to step it up and this time, I made donuts in the air fryer. I cheated and used biscuits in the can for my dough. But you can totally make some homemade dough. I wanted to start small since I'd never made donuts before. I used the recipe from here, from Kitchenfunwithmy3sons.com.

The recipe is really easy and they were fun to make. I liked using my round 1 inch cutter to make the donut holes. Yes, you get two kinds of donuts when you make your own! This recipe has you using a silicone brush to brush the donuts in melted butter. Then you roll them in sugar and cinnamon. But you can get creative and use about anything for your donuts. Powdered sugar, frosting, jam-the possibilities are endless!

Next time, I will make my own dough, and then get a little more creative with my toppings. They're pretty fast to make, since the donuts only cook for five minutes in the Air Fryer.
