Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. Dark Chocolate Fudge

Tis the season for making holiday goodies! I love fudge, especially chocolate fudge. This year I tried an easy recipe from Karosyrup.com. This recipe for Dark Chocolate Fudge was simple and fun to make. All you need is a microwave, a bowl, and 5 ingredients. The fun part was stirring in the chocolate chips into the syrup and milk and watching them melt. The fudge turned out really good. I also sprinkled sea salt on my fudge for that extra touch of sweet and savory I love. You could also add chopped nuts, crushed peppermint candies, or dried cherries. It's up to you! 

Dark Chocolate Fudge

Ingredients:

1/2 cup Karo Light or Dark corn syrup

1/3 cup evaporated milk

3 cups (18) semi- sweet chocolate chips 

3/4 cup powdered sugar

2 teaspoons pure vanilla extract 

sea salt for sprinkling (optional) 

Directions:

Mix corn syrup and evaporated milk in a microwave safe bowl. Stir until well blended. Microwave on high for 3 minutes. Stir in chocolate chips until melted. Stir in powdered sugar and vanilla. Beat 1-2 minutes until thick and glossy. Spread into 8-inch square pan lined with greased parchment paper or plastic wrap. Sprinkle sea salt over the fudge if desired. Chill two hours or until firm. Cut into squares.
