Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. How to make one huge cookie for National Chocolate Chip Cookie Day

 Grab a cold glass of milk or a steaming cup of coffee because you'll want something to drink with this cookie! Today is National Chocolate Chip Cookie day and I really wanted to whip up some cookies. The problem? I only had 1/4 cup of chocolate chips. I have a son that loves to treat himself to chocolate chips, so if there's some in the cabinet they disappear after a while. 

A quick google search for recipes that make only one big cookie was all I needed. I found a recipe that made one huge bakery style cookie and I got out my ingredients. The amount of chocolate chips I had left was the perfect amount. Before I knew it, I was spooning a large amount of dough onto my parchment paper and putting it into the oven. I baked my cookie for 16 minutes until the outside edges looked a little brown and crispy but the top of the cookie still looked soft. 

After giving my giant cookie a nice photo shoot, I bit into it. Wow! There's no words to describe a fresh and warm cookie out of the oven. My taste buds did a little dance and I just took a few bites. Being the nice mom that I am, I saved the rest for my family to taste. 

This recipe was so fun! I've always wanted to make one big cookie, but never had. This chocolate chip cookie tasted just like the ones I've found at bakeries, but without the expense. The inside was nice and gooey, and the edges were crisp. Happy National Chocolate Chip Cookie Day to you!

One Chocolate Chip Cookie for Two 

Ingredients

2 T. butter, melted and slightly cooled

2 T. brown sugar

1 heaping T. granulated sugar

1/4 t. vanilla extract

1 large egg yolk

1/3 c. all purpose flour 

1/8 t. baking soda 

1/8 t. salt

1/4 c. semi-sweet chocolate chips

Directions

Preheat your oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat. In a small bowl, whisk together melted and slightly cooled butter, brown sugar and granulated sugar. Add vanilla extract and egg yolk, and mix well. Add flour, baking soda, and salt, and stir until combined. Stir in chocolate chips and scoop cookie dough onto prepared baking sheet. Bake for 11 to 14 minutes, until the top of the cookie looks mostly set and edges are starting to brown. Allow to cool on the baking sheet for 5 minutes and enjoy!
