Happy Hour and Dessert in Capitol Hill

Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. It was time for a meal there again.  For dessert, we walked about ten minutes west to  Voodoo Doughnut . The Seattle location opened late last ye...

Pineapple Mango Champagne Slushy

My neighbors brought over a bunch of fresh fruit for us. It included the biggest watermelon I've ever held, two bags of green grapes, and a box of mangoes. Apparently their relative gave them a ton of fruit and they needed to get rid of some. The watermelon is sitting on my floor until I figure out a plan with it. I love mangoes, and they're a little easier to eat right away. Plus, there's so many things you can make with this sweet fruit.

This summer I've had some amazing and tasty alcohol slushies while dining out. I decided to make my own using frozen pineapple, mango, and Champagne. It was really easy to whip up in my blender and in no time, I had my own fun summer cocktail.

I used one bottle, a 187 ml. size, of Cook's Brut, a 1/2 cup of frozen pineapple pieces, and a 1/2 cup of fresh mango. The mango should have been frozen, but it turned out fine. The texture of my slushy was like the ones I've had in restaurants, so I figure that's a good thing. I poured my Cook's in first, then added the fruit and blended. Then I poured my slushy mixture into a wine glass and garnished it with a strawberry. Cheers to refreshing summer drinks!
