Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. Unicorn Magic Sugar Cookies

A little unicorn magic in a cookie! This little unicorn plant was purchased at Target in San Diego last year. 

These days we all need a little extra color and whimsey. So my boys and I made Unicorn Magic Sugar Cookies. I discovered some Unicorn Morsels at the store. They're made by Nestle and the recipe for Unicorn Magic Sugar Cookies was right on the bag. We also decided to add some rainbow and unicorn marshmallows from our box of Lucky Charms to add to the unicorn theme. The dough was fun to make and looked so good, we wanted to eat the whole bowl. Instead, I put some in a ramekin and took a photo like it was edible cookie dough at a fancy dessert shop. After chilling the dough for thirty minutes, we spread it out on our floured surface. We used a star cookie cutter and got about 3 and a half dozen cookies. Our home smelled like sugar cookies and that's definitely a good thing.

Nestle Toll House Unicorn Magic Sugar Cookies

2 1/2 cups all-purpose flour
1 t. baking soda
1 t. salt
1 1/2 sticks butter
1 c. granulated sugar
2 large eggs
1 t. vanilla extract
1 2/3 c. Nestle Toll House Unicorn Morsels

Preheat oven to 375 degrees. Combine flour, baking soda, and salt in a small bowl. Beat butter, sugar, eggs, and vanilla extract in large mixing bowl until well combined. Gradually beat in flour mixture. Stir in Unicorn Morsels. Chill dough for at least 30 minutes, then roll out to 1/4 inch thick and use cookie cutters to cut into desired shapes. Use flour as needed to prevent sticking. Bake for 8-10 minutes. Cool on baking sheet for 2 minutes; remove to wire racks to cool completely.

Along with finding the Unicorn baking Morsels at the store, I discovered some Unicorn Rose Bubbles from 14 Hands Winey. I must have been needing some sparkle and magic because I purchased myself a can. I adore the unicorn on the can. How was the Rose? I loved the bubbles and how crisp it tasted. I did a mini photo shoot in my yard, even pulling out my unicorn floaty cup holder I bought two years ago from Target.
