Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. Three Ingredient Peanut Butter Cookies

Have a bite! These Peanut Butter Cookies are dense, soft, and packed with peanut butter. 

Time to pull out those classic cookie recipes. I've made Peanut Butter Cookies many times. But I found a very easy recipe online and it only uses three ingredients. Just take one cup of granulated sugar, one cup of the peanut butter of your choice, and one egg. Stir together and form into balls on a baking tray with parchment paper. Take a fork and make some designs. A secret- if you are out of parchment paper like I was, you can use aluminum foil and spread some butter on top. That way, when you pull those cookies out of the oven, you'll be able to easily get them off the pan.

I was happy with the way mine turned out. I loved how chewy and soft they are. I got fifteen cookies out of my batch, so no need to freeze any. If you have several family members eating them, they'll be gone in a hurry!

As soon as my cookies cooled, a grabbed a few and did a little photo shoot in my dining room and living room. Yesterday was a windy and rainy day with hail, but there were sunbreaks, too. Luckily during my little cookie photoshoot, I had some strong lighting through the windows. And when the cookies were done with their close-up, I ate two right away. They were the perfect afternoon snack to pair with a cup of coffee.
