Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. Seahawks Chex Muddy Buddies and Schwartz Brothers Cookies

Today's the big game! Its Superbowl XLIX and the Seahawks, my home team, are playing the New England Patriots!  Its awesome that our team is playing in the Superbowl two years in a row.  I hope we kick some butt today!  Wouldn't it be sweet if we win again this year?  To snack on while we watch I made some Chex Muddy Buddy Mix with green and blue M&M's and white chocolate chips.  Its sweet, crunchy and way addicting.  I also picked up some tasty sugar cookies with really thick blue and green frosting from the store which are baked my Schwartz Brothers.  Whatever ends up happening today our sugar cravings will be taken care of!

Chex muddy buddies

Prep time: 15 minutes.  Start to finish:  15 minutes.  18 servings (1/2 cup each)

9 cups Rice Chex, Corn Chex or Chocolate Chex cereal ( or combination)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Into large bowl, measure cereal; set aside
In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on high one minute.  Microwave about 30 seconds longer or until mixture can be stirred smooth.  Stir in vanilla.  Pour mixture over cereal, stirring until evenly coated.  Pour into 2-gallon resealable food-storage bags.  Add powdered sugar.  Seal bag; shake until well coated.  Spread on waxed paper to cool.  Store in airtight container in refrigerator. 

I found this recipe on a box of Rice Chex.  I've always wanted to made homemade Chex Mix and found it wasn't too difficult and tasted better that the store-bought.
