Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. Today's Lunch: Baked Salmon

There's many health benefits to eating salmon.  Its filled with Omega 3 fatty acids and Vitamin D which help to fight cancer.  Omega 3 even keeps your skin clear and your hair shiny, you can't beat all that!  Living in the Pacific Northwest I have access to all kinds of fresh salmon.  It tastes delicious and there's a lot of ways to cook it.  Today I wrapped it in tinfoil and baked it for 25 minutes at 300 degrees.  To prepare my salmon I placed it on top of lemon slices, topped it with butter and finally, I seasoned my salmon with salt and pepper. 



It's done! See all the melted butter?  Mine turned out pretty medium cooked so if you like your salmon cooked more you can bake it at 325 degrees or bake it a few minutes longer. 


I cooked some pasta with alfredo sauce to go along with my salmon.  Lunch is served!
