National Peanut Butter and Jelly Day

Peanut Butter and Jelly.  Doesn't just saying that bring back memories of elementary school?  It does for me and this sandwich is the only sandwich I would eat back then.  And it had to be on white bread.  With the crusts cut off by my Mom, who lovingly packed our school lunches for us every day.  I remember in second grade when she used a heart shaped cookie cutter for my Peanut Butter and Jelly sandwich.  There's almost nothing as classic as this sandwich but in today's foodie culture, you can almost always find a new spin on an old classic.  Trophy Cupcakes in Seattle, has created a cupcake.  The Peanut Butter and Jelly Cupcake has vanilla butter cake filled with strawberry jelly and topped with strawberry and peanut butter butter cream.  I loved the sweet surprise of the strawberry jelly inside and the two flavors of butter cream on top.
