Happy Hour and Dessert in Capitol Hill

  Happy Hour Street Tacos with Carne Asada and a Miami Vice from Poquitos.  Poquitos is located in Capitol Hill and they're serving up authentic Mexican cuisine and cocktails. Their happy hour deal is a good one- during Ocho hour, everything on the happy hour menu is just $8! I went with a Miami Vice, a classic Pina Colada with Strawberry. This blended cocktail was so fruity and delicious. To eat I had two Carne Asada Street Tacos and a Birria Poquitos Burrito. The Burrito was small and served with a side of Consommé sauce. Both food items were tasty and satisfying.  My husband also had some Street Tacos and a Margarita from the happy hour menu. My sons had a Cheese Quesadilla and beans and rice. Everyone enjoyed their dinner. I first visited Poquitos in 2012, also for happy hour, and I remembered liking it then, too. Apple Tarte Tatin

Happy New Year! The beginning of 2012 seems like the perfect time to start this blog!  I am so excited to show my photography on here. I have thousands of photos so I didn't know where to start and was feeling overwhelmed. Well, why not start fresh with new photos from the start of the New Year?  I am feeling inspired and hope you will be too! 

Who wouldn't love apples baked with sugar and cinnamon with pastry crust? This dessert didn't last long in our house. Recipe for an Apple Tarte Tatin is below.

1 recipe pastry for a 9 inch crust pie.
1/2 cup butter, softened
1/2 cup white sugar
2 Tablespoons cinnamon
3 apples, peeled, cored and thinly sliced

Preheat oven to 350F.  Line outside of a 9 inch springform pan with foil.  Spread butter into pan and sprinkle with sugar and cinnamon. Arrange apple slices into an overlapping pattern over sugar and cinnamon layer.  Cover apples with pastry, trimming sides.  Place pan on baking sheet.  Bake in pre-heated oven for one hour, allow to cool and then release sides of pan.  Place large plate over pastry, then invert so apple layer is on top.  Remove pan and serve. 

We had our Apple Tarte Tatin with ice cream. Enjoy!

  3. Is this super sweet? I'm looking for an apple tart recipe that is nor really sugary but kinda sour if that makes sense?

  4. You could cut the amount of sugar in half to reduce the sweetness.
