Making Lemon Loaf for Easter

 

A slice of homemade Lemon Loaf! 


Every year for Easter I like to bake something yummy for breakfast. This year I wanted something bright, sweet, and perfect for spring. I chose to make a Lemon Loaf. Everyone knows about the Starbucks Lemon Loaf. Those thick and moist pieces of lemony bread, topped with a white, lemon icing. Who doesn't love snuggling in an armchair while sipping a hot latte and snacking on a slice of Lemon Loaf? I've always wanted to make my own at home, so I gave it a try. 

There are tons of Starbucks Copycat Lemon Loaf recipes online. I randomly picked one. I went with the recipe from yellowblissroad.com. If you love the smell and taste of lemons, then this is a fun and delicious sweet bread to bake! It uses a lemon three ways- lemon juice, lemon zest, and lemon extract. I followed the recipe exactly, except for the baking time. It said to bake for 50-60 minutes, but at just 45 minutes my loaf was done. 

You have to be a little patient when baking this Lemon Loaf. It need to cool for an hour or more before you add the icing. After I took some photos of mine, my boys couldn't wait to try a slice. They liked it so much I let them have another one. It will be so good for breakfast tomorrow for Easter, along with some hard boiled eggs.
